Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil

  • 1 cup red wine
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 1 pound potatoes, peeled and cut into 1-inch cubes
  • 1/2 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven over medium heat, heat the olive oil. Add the beef cubes and sear until browned on all sides.
  2. Add the onion and garlic to the pot and cook until softened.
  3. Stir in the flour and cook for 1 minute, or until the flour is browned.
  4. Add the red wine, beef broth, thyme, rosemary, and bay leaf to the pot. Bring to a boil, then reduce heat and simmer for 1 hour, or until the beef is tender.
  5. Add the carrots and potatoes to the pot and cook for 20-30 minutes, or until the vegetables are tender.
  6. Add the frozen peas and cook for 5 minutes, or until heated through.
